Me Myself & I: These are a few of my favorite things
I never ate breakfast when i was little. The thought of it made me nauseous. Now, it’s my favorite eat of the day.
For Mondays, i spoon together a serving of matcha, oats, water and agave to make matcha oats. Though not vegan, i like Vital Proteins’ matcha collagen.
Tuesday’s breakfasts embody almond butter jelly toast. I smear creamy almond butter and jam on top of toast for gooey, sweet and salty bites.
For Wednesdays, i grab one slice of toast, half a banana and a dosage of hemp hearts before sticking everything together with two spoons of peanut butter to create banana peanut butter hemp toast.
Thursday’s breakfasts typify a smoothie. I chuck a handful of berries, almond milk, a banana, almond butter, spirulina and maca in a blender and hemp hearts on top for protein. If the blender is in the wash or i’m short of ingredients, i pick up a Purple Haze smoothie from Pure Green. For Fridays, i eat up one papaya and two spoons of hemp hearts, and Saturday’s breakfasts give a sweet hello to the weekend thanks to açai bowls from Sun in Bloom. Healthy ice cream for breakfast? Yes please.
P.S. Barebowls in Palo Alto, California serves the creamiest açai bowls ever — easily the most yum i’ve gulped down. I’m licking my lips thinking about it.
For Sundays, I make banana pancakes from oats, banana — obviously— and coconut milk.
